Warm 3 tablespoons olive oil in a wide, heavy 9-11 litre pot, add the onions, and cook, covered, over very low heat, stirring occasionally with a wooden spoon, for at least 30 minutes, or until they are melting and simmering in their own juices but uncoloured. Cover and cook gently for 45 minutes until the onions are meltingly soft, stirring occasionally and removing the lid for the last 10 minutes to reduce any liquid.
